Yes and no. Honey has some enzyme when in contact with water or very high humidity, the enzyme synthesizes hydrogen peroxide, which is a bleaching agent. These hydrogen peroxide bleach and make hair white. However, the concentration of hydrogen peroxide thus generated is too low to cause hair to visibly grey if you simply applied honey to your hair and washed it off. Honey + Water cause white hair.
