Hye. Choose ?extra virgin? and ?cold pressed? varieties of olive oil. These have gone through the least amount of processing and have higher nutrient levels and can be used raw in salads or as dressing. If you are using for cooking just plain olive oils are fine. Remember whether raw or as cooking oil, olive oil is also to be considered a source of fat in the diet and has to be calculated in your daily quota of oil to be consumed in a day.
