Hello doctor, choline is transformed into acetylcholine by an enzyme in your body. Although not technically a vitamin, choline is an essential nutrient that your body requires to function properly. Choline is similar in structure to b vitamins and is sometimes classified accordingly. You can synthesize choline in small amounts, but you require it in your diet in order to have adequate amounts to produce acetylcholine and other products in your body. Meats, dairy, poultry and fish contain high levels of choline, with the highest levels coming from liver. Chocolate, peanut butter, brussels sprouts and broccoli also contain significant levels of choline. Wheat contains choline, but only in the germ portion, so try to choose whole-wheat products.
