I am confused and would like an opinion. The lentils and beans that are washed thoroughly and then soaked in water either for a couple of hours or at times overnight, do the essential nutrients in them get ripped off and seep out in the water? What is ideal for getting maximum health benefit - retain the soaked water and use it for cooking or simply drain it? Kindly help. Many thanks.
