1) Whole grains - brown rice, rotis made from whole wheat flour, whole jowar flour and bajra flour, Ragi, Oats 2) Fresh vegetables - they have high fibre content. Also include green leafy vegetables. 3) Fruits - they also have high fibre. Your mother can take apples, pears, Sweet lime (Mosambi), Orange, papaya, guava etc. Mangoes, bananas and grapes have high sugar - hence only consume in less quantity. 4) Protein - pulses, egg, lean meat (fish, chicken), sprouts 5) Milk - low fat milk and dairy products 6) Good fats like Omega 3 and mono unsaturated fats (MUFA) should be consumes. Eg; Canola oil, flax seed oil, nuts etc Take frequent small meals instead of 3 big meals. In between meals she can take snacks of fruits, buttermilk, yoghurt etc.
