You have mentioned you are 70. I presume you have type 2 diabetes. Here the problem is not only the amount of insulin, but also resistance of different organs to insulin that cannot be modified by pancreas transplant which is more feasible and even curative in type 1 diabetes.
So in my opinion pancreatic transplant is not recommended for you.

Mr. lybrate-user, Thanks for the query.
For treating diabetes pancreas transplant is considered to be a permanent cure. But the this is one of the very difficult procedures, not yet very commonly done. Secondly availability of live pancreas is the most difficult problem. It still a very experimental procedure, may take years to become a reality. There are experiments going on for stem cell generated pancreatic cells formation, but still at lab level. Thanks.

Mr. lybrate-user, Thanks for the query.
HbA1c% 9.4 shows uncontrolled diabetes. This means present treatment is not effective. It needs to be upgraded. Since there is no mention of drugs being taken, dosage, glucose levels, lipid profile, diet pattern extent of exercise and BP readings, it is difficult to comment. Plus with morbid obesity it difficult to control the condition. There is a serious need for reducing weight. The increase in liver enzymes is due to presence of fatty liver. Thanks...more

The food has less effect on pancreas... and it is wise to start proper treatment immediately... preferably homoeopathic.
