Egetable has low glycaemic index in comparison to fruits. Fruits like apple, oranges, grapefruit, pear, cherries, peaches, apricot has low glycaemic index in comparison to other fruits. Taking specifically about vegetables, the majority of vegetables has a low glycaemic index except for roots and tubers such as potato, yam, sweet potato. It's not only the glycaemic index of the food that impacts our blood glucose levels. The quantity of carbohydrates that we are consuming also has an impact on blood sugar levels.
