If you need pantoprazole for more than 2 weeks ,it means ,acidity may be a symptom of some other underlying cause, like, an infection .You should take a course of antibiotics under the guidance of a physician. Get an endoscopy done if it doesn't help.

But the question is about side effects or safety profile. These medicines should never be taken continuously over a long period of time as it will increase chances of infections and iron deficiency. It is essential to eliminate the main cause of your problems instead of taking antacids continuously. Pantoprazole has no interaction with alcohol, but ranitidine increases blood alcohol levels. Yes. I would suggest you to continue following the doctor's advice. Avoid large meals, spicy/oily/fried foods. Take meals a few hours before bed time. Mild to moderate excercise/walking after meals could help. Also, if you have had this problem for long, revisit your doctor as he might want to get an upper gi endoscopy done.
