Yes it is possible. If the head injury is probably on the frontal region of brain where there are memory and cognition centres then it may lead to all kinds of amnesias. Getting up from coma always doesn't mean that there will amnesia. It all depends upon the location of the brain which is injured.

first of all, please accept my heartfelt wishes for taking care of your mom. Alzheimer's is really troubling disorder not only for the patient but is equally taxing on the loved ones and caregivers.
Since I saw that she has done her angio and definitely, must be on cholesterol meds, I am finding a greater risk for such patients to be prone to alzheimer's and dementia.
Ayurveda has some interesting roles to play here, namely

Is she taken a neurological or psychatric medicine? If she taken so that its a result after taking those medicine. If you want homeopathy medicine so you should be proper case taking and after taking medicine and avoid all hypnotic medicine and you should be taken zinger and garlic juice daily three time in a day go for medicine.
