Suggestionn Read food labels. If possible, choose low-sodium alternatives of the foods and beverages you normally buy.
Eat fewer processed foods. Only a small amount of sodium occurs naturally in foods. Most sodium is added during processing.

You and ADA both are right. Blood sugar should be kept a little more than normal to avoid hypoglycemia which is tolerated less effectively by elderly.

Your current reports are fine and do not require medicines. You will never have a low sugar level as long as you are not taking certain anti diabetes medicines. However, you must keep a 3 monthly check of the following tests to be done from a laboratory. Fbs, plbs, Hba1c. Presently, do continue with your efforts at maintaining normal sugar levels.

every insulin has it's time of action. for example human mustard 30/70 has 12 hrs of action or actrapid has 6-8hrs , novorapid 4 hrs humalog 4 hrs humalog mix25/75 has 12hrs lantus (glargine) has 24 hrs etc..
after it is finished then sugars will start rising again and need another shot.
