Hello. I suppose your wife is suffering from severe knee osteoarthritis for which she has been adviced knee replacement. Muscle cramps can be due to a number of reasons including dehydration, dyselectrolytemia, calcium or magnesium deficiency, overexertion of muscles during day and other neurological disorders. Keep her hydrated with lot of fluids. See a Rheumatologist who would examine and order tests accordingly.
