In your case, it is the dominant part of the brain is involved in stroke (left side) the RT side of the body along with speech and memory are affected, so recovery is not complete, please upload the CT scan brain images, it's looking like CSVT.

Calories cannot be calculated for brain disease alone and so Few diet tips - Not to eat fried food items and Can eat All green vegetables, moong , chana , Dal , rice etc And to apply ghee over chappati and don’t apply oil over chappati And to drink milk mixed with turmeric powder twice a day And If possible eat eggs on alternate days And If possible in breakfast eat atleast one bajra ka rotla And Eat seasonal fruit

Remember when a patient is on ventilator than usually sedation is given and so confirm about her lungs status and her brain status and ask for her rating with Glasgow coma scale and than we can decide on her prognosis
