It is advisable to test blood glucose level before and 30 mins after breakfast, lunch and dinner for next 3 days. Then only it can be concluded if your blood glucose level have reverted back to pre-covid levels. Yes severe hunger and alleviation of same after stopping acarbose is a sign of hypoglycemia induced by anti-diabetic drugs. It's in your best interest if you get the hba1c testing done and along with same you consult an endocrinologist in-person, who would help you the best.
