I have seen the details mentioned. Your fasting and pp glucose levels look very good. Please also look at hba1c%, that will give a better idea. You may stop metformin 500 mg for a few days and then check the fasting & pp glucose, if levels remain in good control then continue the same. Which diabetologist you are consulting, every 3 months hb1ac/fbs/ppbs/.every yearly serum albumin and creatinine ratio. Serum albumin required. Kindly note do not go into hypoglycemia.
