Vaata refers to the airy elements, kapha to phlegma, and pitta to bile. Imbalance between these where there is predominance of one over another leads to poor health. Eating them fresh, warm, and in dry form is important. It is better not to cook them in dense, oily forms. When shifting to a kapha-friendly diet, initially could be a bit difficult, but the benefits are great.
