Hi. Thankyou for the query. Gluten has got nothing to do with weight gain. If you are losing inches you may be doing fine. If weight is stable chances are your body has reduced the metabolism and you need to change your routine. You need to go for a personalised diet consultation. Just randomly crashing intake wont help. As per your workout you are not giving enough nutrition to your body.

You need to make changes to your approach to health and lifestyle. 1. Its better to consult a proper dietician because Gym Trainers are not qualified to give any diet advice. They are only trained in Body building and not in the science of weight reduction. Hence you are not able to lose weight. 2. The Exercises you are doing currently are only toning exercises and not fat burning exercises. 3. Real fat burning exercises are Cardio exercises. In which you move your feet and your heart rate goes to 120-140. (Target heart Rate) 4. Your calorie burn @ Exercise per hour would be about 250 now. You need to push it to 450-500 per hour. More intensity is needed. 5. In your diet. Upma and Dosa are very high in calories. Even chutneys are very high in calories. 6. There is no Gluten issue. Monitor your weight loss through Myfitnesspal app - free version. 7. Best will be to consult any dietician in your town because your BMI is 38+ which means Obese Cl2. If you Do not reduce now you could fall prey to any lifestyle disease. 8. Take more fruits and water and move towards a healthier lifestyle.
