As one should eat chicken with removed fat or the skin but do restaurants remove the upper skin of the chicken when dey prepare the chicken at such high temperatures.

Hye. Thank you for your query. Well, actually chicken skin does not add so much calories to your total chicken calories. Also chicken cooked with skin intact actually helps lesser absorption of cooking oil and it's better to cook chicken in its own fat rather than add too much excess fats. Also most recipes call for skin to be intact hence restaurants usually do not desk in the chicken. Actually the chicken skin is not really the concern but it's the batter frying, deep frying and oily dishes that cause the increase in the calorific value of the dish.
