My cholesterol level was 206 and my triglycerides was 467. My doctor prescribed Stanlip and Roseday after dinner. If my lipid levels are at normal levels, could I stop taking these medicines as I have heard statin is not good in long run, it interfere in vitamin K absorption.

Statins are quite safe. When you combine it with Fibrates (Stanlip) rarely it may cause Muscle and Liver toxicity, that you can monitor by measuring Muscle Enzymes (CPK- Total) and Liver Enzymes (DHOT/ SGPT) most of time these drugs are tolerated well without any major side effects. There is hardly any interference with Vit K If you stop these drugs your Lipids (Cholesterols and TG) will rise again, so continue these drugs while keeping monitoring the muscle and Liver Enzymes.
