Are the indian meals like sabji, daal etc be considered as processed food? Actually I am confused about what really are processed foods and what makes them so? For example if I had to eat soybeans then preparing it the traditional way of indian cooking can make it processed and bad for health? Considering because of diet of nephrotic syndrome (fsgs).

Indian home meals are considered cooked, which are nutrition neutral. Packed foods are processed, which are nutrition negative. Soaked/sprouted/steamed foods are nutrition positive. Soy bean is available in all 3 forms. If you buy soy nuggets or soy paneer like tofu, it could be processed as they are made in a factory. At home soy bean needs to be soaked as it is very hard legume. After soaking it can be sprouted or steamed or cooked. Cooking reduces nutritional value of all the foods. You can have soaked soy bean as it is or keep in boiled water for some time (do not boil with water). It will have steaming effect. Then you can have in salad form adding tomatoes, coriander, lemon etc. You can also make soy shake by blending soaked soy bean with water, banana, jaggery almonds etc.

Potato curry is not processed, but potato chips or french fries are processed. Indian dal or sabji etc are not processed foods. They are cooked foods.
